1 Graham Cracker Recipe — Prepare as per recipe EXCEPT place in freezer for only few minutes, or time it takes to cook pudding. Spread the dough into the bottom and sides of a 10×13 greased pan and bake for 20 minutes,or until browned and firm. When remove from oven, lay towel over top and press ‘cookie’ flat. – Set aside for Caramelized bananas.
Banana Pudding Recipe:

.In a large saucepan whisk eggs yolks. Add 2 cups sugar and cornstarch,whisking till smooth. Add milk, vanilla, and salt. Cook over medium low heat, stirring constantly until thickened.

.Remove from heat, add butter, stir until smooth. Set aside and prepare the bananas

Caramelized Bananas:
1 Cup Brown Sugar
1/2 Cup Butter
6 Bananas Sliced.
Place sugar and butter in skillet over med high heat cook until bubbles, add bananas and cook a couple more minutes. Pour half over crust, pour pudding over bananas and then add the other half of banana mixture. Top with meringue icing;
- 6 Egg, whites
- 1 Cup Sugar
- 1 Cup Light Corn Syrup
Place egg whites and sugar in double boiler,water at gentle boil. Beat at high speed with electric mixer 5-7 minutes or until stiff peaks form. Gradually pour in corn syrup and lemon juice, beat 5 minutes or until spreading consistency.
