6 slices bacon
1 onion sliced
1/2 Cup mushrooms sliced
1 Tablespoons cornstarch
1 teaspoon salt
2 teaspoon mustard
28 oz OR 3 Cups green beans- Canned, frozen, or blanched fresh.
1 Cup water IF NOT using canned.
3 Tablespoons brown sugar
2 Tablespoons vinegar
2 boiled eggs-optional
I do all of this in a skillet. Fry bacon until crisp, remove and crumble. Add mushrooms and onion to drippings sauted until soft. Move vegetables to side and add cornstarch and salt and mustard to drippings, mix in. Add 1/2 cup water OR liquid from canned beans. Stir all together, cook on medium until mixture boils. Blend in brown sugar and vinegar, add green beans stir to coat with sauce, heat through. Stir in crumbled bacon. Turn onto serving dish, garnish with sliced eggs.
