What is Celiac Disease
REAL SIMPLE: eating wheat of any kind messes up the immune system and makes a body sick in many different ways.
THEY SAY. They are doctors, and medical professionals, experts. It is is a genetic disorder affecting children and adults. People with celiac disease are unable to eat foods that contain gluten, which is found in wheat and other grains. In people with celiac disease, gluten sets off an autoimmune reaction that causes the destruction of the villi in the small intestine. People with celiac disease produce antibodies that attack the intestine, causing damage and illness. About 1 in 130 have Celiac. Gluten intolerance is inherited. Diagnosis is through blood test and biopsy. They are correct, but not
WHAT IT IS ALL ABOUT: Celiac Disease, or the term Celiac is used to describe the malady of one who reacts to gliadan, a fragment of the gluten (protien) in wheat. There are many levels of how one can react to this sensitivity to the protien. A person is deemed intolerant or sensitive to wheat gluten, or the gliadan in the gluten.
It was thought that the Celiac could not digest the gliaden/gluten, that the enzyme to digest this protien was missing in the individual. Now it has been understood, that it is not a missing enzyme but a bodies immune system reacting to gliadan, by producing antibodies to attack it. This is why some will consider it an allergic reaction. It is an allergy to the point of the body reacting to what it considers a foriegn body like dust or a peanut. But it is different than a peanut allergy, because there is not an immediate reaction. Usual allergic reactions are immediate, with a sneeze, hive or stop breathing. Not so with gluten intolerance.
The gliaden/gluten is more like a virus to the body. (Gliaden IS a part of the adenovirus). The gliaden enters the body and the body begins to build antibodies against it, as with any infection. BUT the problem is the gliaden basically infilterates itself into the tissues of the body, the intestines it can cross into the blood stream and then it is everywhere. The antibodies attack it, AND what ever it has attached to, the immune system now is attacking it’s own body. This is how Celiac /Gluten Intolerance gets to be an autoimmune disease.

This fat soluble chart shows the fat soluble vitamins, A, D, E, K, the benefits of, and the problems one can have if they are missing these vitamins. Just missing these four nutrients can cause a number of problems in the function of a body. Add this to the damage that is being done to the gut and the chemical reactions of the gliadans in the blood stream, on brain function, and you will find that gluten intolerance adds up to just about every illness you have ever had.
Celiac Delete Wheat with Christy Petty is a great blog post. You get my vote for Celiac Delete Wheat with Christy Petty and I will bookmark this blog right now.
Symptoms that gluten allergies have turned to Celiac are diarrhea, weight loss, iron deficiency, bloating, abdominal pain and malnutrition. The latter is caused by a decreased capacity to absorb important nutrients like iron and vitamins K and D. Celiac sufferers are at higher risk for esophagus, pharynx and tiny intestinal cancer. Fibroid lung disease appears to occur at a higher rate in gluten allergy and Celiac sufferers.
