Dukan Mock Rice Pudding.

5 eggs

2 3/4  Cup cottage cheese
1 tsp vanilla
1 T and 2 t of Stevia or no cal sweetener ( this adjusts according to taste and type)


Preheat the oven to 350. Beat the eggs with a hand held whisk. Add the cottage cheese, sweetener and vanilla. Carefully stir to combine. Transfer to a flan style baking pan or pie plate and bake for approx 45 minutes. Watch for browning too quickly- cover top with foil if necessary. Remove from oven when cooked and allow to cool. Serve with yogurt topped with cinnamon and nutmeg.
