3 Cups peeled sweet potatoes cut in 2 inch chunks
2 Tablespoons olive oil
1 small onion chopped
1 Tablespoon chili powder
2 teaspoons salt
2 Tablespoons brown sugar
3 Tablespoons butter , optional
Warm olive oil in pan,on stove top, that can be covered, add potatoes and onions. Stir in salt and chili powder, sauté stir for a few minutes, coating all potato with spice and oil. Cover and turn to low, cook till tender, about 15 minutes, stirring occasionally. Add sprinkle with sugar and add butter, raising heat to medium, cook about 5 min more. Serve. – Sometimes my potatoes/onions don’t produce enough moisture and I add about 2 Tablespoons of water, while cover cooking.
