Oatmeal Cookies

Oatmeal Cookies
  • 1 ¼ Cups Rice Flour
  • ¾ Cup Oat flour or Tapioca flour
  • ½ teaspoon Salt
  • ¼ teaspoon Xanthan Gum
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking soda
  • 1 teaspoon Cinnamon, omit if using peanut butter chips
  • 1 ½ sticks Butter, softened
  • 1 ¼ Cups Brown Sugar
  • 2 Egg, large
  • 3 Cups Oats
  • 1 Cup Craisins or Raisins or Bluberries
  • 1 Cup white chocolate chips or Dark chocolate chips OR Peanut Butter Chips, OR

1.Preheat oven 350, grease or PAM or parchment line baking sheet.
2.Mix Rice and Oat (or Tapioca) flours, baking soda, slt and xanthan gum. Set aside:
3.Cream together butter and brown sugar on medium speed until light, Add eggs one at a time. Mix until combined.:
4.Add dry ingredients to creamed mixture, mix until dough forms.
5.Add Oats and fruits and chips. Mix on medium speed just till mixed through.
6.Chill dough for 5 minutes.
7.Scoop 1 tablespoon each onto baking sheet.
8.Bake 15 minutes, until cookies are golden and set. Allow cookies to cool on baking sheet about 3 minutes before transferring to wire rack or cooling area.
Servings/Yield: 24
