Caramel Apple Cake With Caramel Topping

  • 2 1/2 Cups Sugar
  • 3 Eggs
  • 1 1/2 Cups vegetable oil
  • 2 Cups Rice flour
  • 1 Cup Oat OR Tapioca Flour
  • 1 teaspoon xantham gum
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla
  • 1 Cup chopped walnuts
  • 2 1/2 Cup diced apples.

Peel and cut apples.  Preheat oven to 350.  Cream together sugar, eggs and oil.  Add flours, xanthanm and baking powder. Add vanilla, nuts, and diced apples.  Spread into greased and floured 13×9 inch baking dish.  bake for 45-60 minutes.  – Test with toothpick, cake done when comes out clean. When done poke holes in cake with skewer or knife, lots of them.

Last 15 minutes of bake time: Caramel Topping.

  • 3 sticks butter
  • 2 cups brown sugar
  • 1/4 Cup milk

Heat all ingredients together over medium heat. Bring to boil, stirring constantly.  Boil for 2 minutes. Pour topping over warm hole poked cake.
